I am trying to follow Lokuma's example and clean out my pantry. I had a 2 cans of tuna and salmon. So this is what I came up with:
* 1 can tuna
* 1 can salmon
* 1/2 parnsnip (had some left over and decided to throw it in as well, it added nice texture)
* 2 carrots
* 2 green onions
* 1/3 cup of fennel greens
* 2 tbl s. mayo
* 1 tbl s. watsaby mayo
* 1/2 tbl s. dijon mustard with the seeds
* 5-7 maccademian nuts (I usually would use walnuts but only had the maccademian nuts -- turns out
they worked just fine)
* juice from 1/2 lemon
* salt and pepper to taste
Chop all veggies. I like them not too finely chopped as I preffer the texture better that way. Add in a mixing bowl the chopped veggies, the tuna and the remaining ingredients. Stir well. Enjoy on a toasted bread. For some extra added fanciness (and calories), you can spread the salad over bread, place a thin slice of dubliner or parmesan cheese and place in the grill oven for 10 min on 375F. Yum!!!! I had this for lunch today and took a picture but my camera got left at work. So I will add the picture at a later time. :)
