The Balkan Burger according to the NYT


Take a look at the New York Times Dining section - a lot of talk about (and pictures of)a kufte-like concoction called pljeskavica and ajvar (a lutenica look-alike).

    Very interesting, and the name is so funny - "pjeskavica".
    However, I'm not sure you can make a square shaped burger, by just clapping it with hands.
